Zucchini Bread :)

So in a continued effort to use what I can out of my garden there was still a HUGE zucchini which I couldn't think of anything else to do with it so today it got butchered and turned into delectable zucchini bread. I'm planning on taking it to work with me, my co-workers will have it eaten by 8am that is a promise. :)



Zucchini Bread

(No hiding this one it is a Betty Crocker Classic Recipe, 
I actually had to double it to use the entire MONSTER zucchini)
3 C. shredded zucchini
1 2/3 C. sugar
2/3 C. vegetable oil
2 t. vanilla
4 eggs
3 C. flour
2 t. baking soda
1 t. salt
1 t. cinnamon
1/2 t. cloves
1/2 t. baking powder
1/2 C. chopped nuts
1/2 C. raisins (opt)
Mix ingredients together an pour into a greased and floured pan, cook at 350 for 50-60 minutes for a standard 8" loaf pan
